Olivier is delighted to team up with his old work colleague Graham Neville who will be joining him at Dax Restaurant!

Olivier Meisonnave is delighted to announce that Chef Graham Neville has come on board with him at Dax Restaurant.

Olivier and Graham are old colleagues from the much loved and missed Thornton’s; first working together at its original Portobello canal-side location.

Olivier says of the move “I’m so excited to be working with Graham again and have always admired his cooking particularly at Restaurant FortyOne. I think this new partnership is going to deliver a brilliant future for Dax.”

Neville’s aim at Dax is to get to know the restaurant and its customers before he brings his inimitable style to the menu.

The announcement coincides with the completion of a smart refurbishment of Dax during April. The basement restaurant’s uneven flagstone floor, always a source of rocking chairs and reflected sound, is now luxuriously carpeted. The refurbishment also includes additional interior features and modernised facilities.

A stellar career, that has taken him to the top ranks of Irish haute cuisine, began in the humble surrounds of DIT’s Culinary School at Cathal Brugha Street. After graduation, he travelled the world working in divers locations from TRU restaurant and Les Nomades in Chicago, Heston Blumenthal’s Fat Duck in Bray, Le Caprice in London, La Pyramide in Lyon plus seven years with Kevin Thornton.

In 2008 he took up the post of Head Chef at the newly opened Restaurant FortyOne where off-site he developed the kitchen’s own organic garden. Awarded for his innovative style with a plethora of accolades including the prestigious Food & Wine 2014 awards for Best Restaurant in Dublin, Best Chef in Dublin and Best Chef overall in Ireland.

Graham Neville is the current Commissioner General of Euro-Toques Ireland, the professional chef’s and food heritage organisation. A prestigious role previously held by Ross Lewis, Derry Clarke and Myrtle Allen.
